We had the opportunity to send our photographer to visit Bo & Ivy Distillers in Ivy City the other day. Here, Michael Curcio, co-owner, explains the distilling process. (RSP)
In the background are the stills used to Bourbon (tall ones in front) and Vodka (shorter ones in back) Right in the center is a shorter steel cask filled with freshly distilled Bourbon. One whiff of that, and you know why it needs to spend a few years in casks. (RSP)
The real secret of Bo & Ivy is their casks, made for them in West Virginia. They try to source all their ingredients locally, so much comes from Virginia. We’d love to show you more pictures of the place, but our photographer got so caught up in learning about the process, that he forgot all about his primary responsibility. (RSP)
Here are a few of their products. Their flagship brand is the Bourbon on the left, but their Corn Whiskey and Navy Strength Gin are unusual and worth trying. Or, even better, giving as Christmas presents (RSP)
