Time for some Cake Theory

Opening a new store is a fraught operation at the best of times. And these are not the best of times. Nonetheless, Tiffany Lightfoot is taking the plunge. After years of baking in her own kitchen, and appearing in the TV programs CandyLand and Holiday Wars, she has now found a new way of creating the old stand-by, cupcakes.

Instead of having a few pre-set offerings, the My Cake Theory customer will be able to choose the flavor of the cupcake itself, the filling, the frosting and, finally, toppings. The concept – based on such places as Chipotle and &Pizza – is called “Flavors to Frills” here. Customers will slide along a gorgeous counter made out of a slice of wood with the bark still on, varnished and polished to a high gloss, and watch as their creation is put together for them. For added visual interest, the back wall of the store is glass, giving you a view of the kitchen area, which promises to be lively at all times. Ms. Lightfoot explained that people always wanted to hang out in her kitchen while she was baking, so why not recreate the experience?

But, the work done on the space at 325 7th Street SE (formerly occupied by Dawn Price Baby) also reflects the current Covid situation. If you prefer to make the transaction as safely as possible, there is also a window to the alley through which your cupcake can make its way to you.

If it is at all possible for you to go in, do so – if only to see the large photographs on the wall showing some of Ms. Lightfoot’s more astounding creations. For ten years, she has been active in her kitchen and on Instagram. Now, here’s your opportunity to try it in person.
