Saturday, November 21, 10 a.m.-3 p.m.

Cost: $149, including class and a trip to the trap and skeet center

Register online at hillcenterdc.org

Calling all carnivores! Many of us have forgotten that the meat we buy comes from animals. To reconnect with the meat’s source (hint: it’s not a cellophane-wrapped package), local chefs have turned to whole animal butchery. The Whole Beast series will highlight the processes involved in hunting, plucking, butchering and preparing prime cuts, as well as some of the lesser-known bits. You will leave class with a greater appreciation for the whole animal as well as its parts, from nose to tail or beak to feet.

In this class, Chef David Guas takes you on a (metaphorical) trip to Sportsman’s Paradise a.k.a. his home state of Louisiana! Since moving to the Mid Atlantic, Chef Guas has continued to take every opportunity to hunt and has fostered his love of the outdoors in the region, and he wants to bring out the sportsman or sportswoman in you! First stop: the group will meet at Prince Georges Trap and Skeet Center, where you will enjoy a private shooting lesson. There will be three positions from which you can learn to shoot skeet or hone your skills.  On to Hill Center!  Chef Guas will discuss local hunting techniques (upland and water) and demonstrate how to prepare local game.
